Menu Planning Monday – week of March 1

Here’s what we’re eating for dinner this week, the week I go back to work.  Sigh.

Monday – London broil, mashed potatoes, green beans

Tuesday – baked chicken and rice

Wednesday – spaghetti and meatballs, green salad

Thursday – BBQ pork sandwiches (pork from freezer stash)

Friday – pizza picnic (homemade or takeout TBA)

Saturday – gussied up hamburgers (there’s a local restaurant that makes burgers with prosciutto mixed up with the meat, that might be a winner or maybe cheeseburgers with carmelized onions), homemade fries, something green and healthy to counteract all the greasy wonderfulness

Sunday – roast turkey breast with mashed potatoes and veggies (Thanksgiving in March)

I’ve also learned another valuable lesson.  Despite the name, I can’t really leave the menu planning until Monday.  Future meal plans need to be written on Sunday night, as part of the weekly going back to work preparations.

Now I’m going to go make bread and eat ice cream.  Wish me luck tomorrow.  It’s just a few hours at school, but I’m really *not* looking forward to it.
